The fast growing plants produce a large, juicy, and sweet fruit. Typically eaten raw, but can also be added to salads, used in stir-fries, or made into jicama fries. Plant produces tall climbing vines (20+ ft) and a white turnip shaped root that tastes like water chestnuts. The roots are light brown in color, and may weigh up to 50 pounds, although most will be between three to five pounds.Store in cool dry place after harvest.
Caution: The seeds and pods are poisonous! Only use the roots.
